The White Labs English Hard Cider Yeast is another great product that is one of the best hard cider yeast we have found to date. It ferments dry as well as retains the natural flavor of apples. Additionally, it has a medium level of flocculence with a decently fast fermentation time. Additionally, sulfur is produced during the fermentation process but it quickly goes away.
And like many of the yeasts we recommend, this one also has a high attenuation of more than 80%, which converts sugars to alcohol. Our favorite feature is probably the fact that it is neutral and allows the natural flavors of the apples to come through in the end.

This is an English-style yeast that also has a very good tolerance for low temperatures. You can work with it in the low 50s Fahrenheit and it even goes down to the low 3s in terms of pH. All in all, you can’t really go wrong with the Lallemand Nottingham, and worst case situation you can use it to ferment ales and other alcoholic beverages.
